Innie’s Peanut Brittle
Christmas time means my grandma (aka Innie) makes all of my favorite sweet treats. My most favorite treat of all is her peanut brittle. We have a little tradition of making the brittle together each year, and it makes my heart so happy. We’re excited to share with you her ‘famous’ peanut brittle recipe, and you won’t want to miss out on this one! Full recipe at the end of the page.
INGREDIENTS
2 Cups Raw Peanuts
1 Tablespoon Butter
1 Teaspoon Vanilla
2 Cups Sugar
1 Cup Light Corn Syrup
1/2 Cup Water
1 1/2 teaspoons baking soda
DIRECTIONS
Spray 2 cookie sheets with butter Pam and wipe with butter. Put in fridge.
Measure out 2 cups of raw peanuts with 1 Tablespoon of butter and 1 teaspoon vanilla added on top. Set aside.
In a deep saucepan, mix 2 cups sugar, 1 cup light corn syrup, and 1/2 cup of water.
Cook over medium heat to 285 degrees.
Add peanuts, butter, and vanilla and cook to 300 degrees. Stir often!
Remove from heat and stir in 1 1/2 teaspoons baking soda. Stir until desired color is reached.
Remove pans from fridge and pour 1/2 the mixture onto each pan. Spread with spatula until thin.
When cooled, break into pieces.
